This Regulation lays down implementing measures for certain products under Regulation (EC) n. 853/2004 and for the organisation of official controls under Regulations (EC) n. 854/2004 and n. 882/2004, derogating from Regulation (EC) n. 852/2004 and amending Regulations (EC) n. 853/2004 and n. 854/2004.
As regards Regulation 853/2004 which lays down specific requirements concerning hygiene rules for food of animal origin, certain implementing measures are laid down for meat, live bivalve molluscs, fishery products, milk, eggs, frogs' legs and snails, and processed products thereof. Among these, requirements governing parasite checks during handling of fishery products, limits and analytical methods for the chemical check of total volatile basic nitrogen (TVB-N). In order to verify the limits for Paralytic Shellfish Poison (PSP), Amnesic Shellfish Poison (ASP) and lipophilic toxins method different from microbiological ones are authorized.
As regards Regulation (EC) n. 854/2004 which lays down specific rules for the organisation of official controls on products of animal origin intended for human consumption and Regulation (EC) n. 882/2004 which establishes at Community level a harmonised framework of general rules for the organisation of official controls, certain rules are developed and other requirements are further specified.
More flexibility is given to foods with traditional characteristics, by way of derogation from the structural requirements laid down in Regulation (EC) n. 852/2004.
